- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- Salt and pepper to taste
- 4 hoagie rolls, sliced open
- 8 slices provolone cheese
- Optional: mushrooms, jalapeños, hot sauce
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the thinly sliced beef to the skillet and season with salt and pepper. Cook, stirring occasionally, until the beef is browned and cooked through, about 5-7 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced onion and green bell pepper. Cook, stirring occasionally, until the vegetables are softened and lightly caramelized, about 5-7 minutes. Season with salt and pepper to taste.
- Return the cooked beef to the skillet and toss with the onions and peppers until well combined.
- Preheat your oven to broil. Place the hoagie rolls on a baking sheet, cut side up. Divide the beef mixture evenly among the hoagie rolls.
- Top each hoagie roll with 2 slices of provolone cheese.
