- In a small saucepan, combine the vinegar, water, sugar, salt, and any optional spices you'd like to use.
- Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve completely.
- Once the mixture is boiling and the sugar and salt have dissolved, remove it from the heat and let it cool for a few minutes.
- Carefully pour the brine over the sliced onions in the jar, ensuring that the onions are completely submerged.
- Let the pickled onions cool to room temperature, then cover the jar with a lid and refrigerate for at least 1 hour before using.
- The pickled red onions will keep in the refrigerator for up to two weeks. Enjoy them on sandwiches, salads, tacos, or as a garnish for various dishes!
