Ingredients:
Pineapple Ginger Glazed Salmon
Ingredients:
- 4 salmon fillets
- 1 cup pineapple juice
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp cornstarch
- 1 tbsp water
- 2 tbsp olive oil
- Salt and pepper, to taste
- Sliced green onions and sesame seeds, for garnish
- Prepare the Glaze: In a saucepan, combine pineapple juice, honey, soy sauce, ginger, and garlic. Bring to a simmer over medium heat. In a small bowl, mix cornstarch and water to form a slurry. Add to the saucepan and cook until the sauce thickens. Set aside.
- Cook the Salmon: Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the salmon and cook for about 4-5 minutes per side, until the fish is cooked through and flakes easily with a fork.
- Glaze the Salmon: Brush the thickened glaze over the salmon fillets in the last minute of cooking, allowing it to caramelize slightly.
- Garnish & Serve: Transfer the salmon to serving plates, drizzle with extra glaze, and sprinkle with sliced green onions and sesame seeds. Serve with your favorite sides and enjoy!
