Pineapple Ginger Glazed Salmon​

Ingredients:

  • 4 salmon fillets
  • 1 cup pineapple juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Sliced green onions and sesame seeds, for garnish
Instructions:

  1. Prepare the Glaze: In a saucepan, combine pineapple juice, honey, soy sauce, ginger, and garlic. Bring to a simmer over medium heat. In a small bowl, mix cornstarch and water to form a slurry. Add to the saucepan and cook until the sauce thickens. Set aside.
  2. Cook the Salmon: Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the salmon and cook for about 4-5 minutes per side, until the fish is cooked through and flakes easily with a fork.
  3. Glaze the Salmon: Brush the thickened glaze over the salmon fillets in the last minute of cooking, allowing it to caramelize slightly.
  4. Garnish & Serve: Transfer the salmon to serving plates, drizzle with extra glaze, and sprinkle with sliced green onions and sesame seeds. Serve with your favorite sides and enjoy!
