  • Fresh cilantro leaves, for garnish
  • Cooked jasmine rice, to serve

  1. Heat oil in a wok or large skillet over medium-high heat. Add garlic and shallot, stir-fry until fragrant.
  2. Add red curry paste to the wok, stir-fry for 1-2 minutes until aromatic.
  3. Add catfish fillet pieces to the wok, stir-fry until they are cooked through.
  4. Stir in bell pepper slices, Thai basil leaves, fish sauce, soy sauce, oyster sauce, and sugar. Cook for another 2-3 minutes until the vegetables are tender-crisp.
  5. Remove from heat and garnish with fresh cilantro leaves.
