Ingredients:
For the Fried Fish:
- 2 whole fish (such as snapper or tilapia), cleaned and scored
- Salt and pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- Vegetable oil, for frying
For the Chili Sauce:
- 5-6 dried red chilies, soaked and deseeded
- 4 cloves garlic
- 2 shallots, chopped
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon palm sugar (or brown sugar)
- 1/4 cup water
- 1/2 bell pepper (any color), sliced
- 1/2 onion, sliced
- Spring onions (scallions) and cilantro, for garnish
Instructions:
- Prepare the Fried Fish:
- Season the fish with salt and pepper, both inside and out.
- Dredge the fish in all-purpose flour, shaking off any excess.
- Fry the Fish:
- Heat vegetable oil in a deep frying pan or wok over medium-high heat.
- Carefully place the fish in the hot oil and fry until golden brown and crispy on both sides, about 6-8 minutes per side depending on the size of the fish.
- Remove the fried fish from the oil and drain on paper towels to remove excess oil.
- Make the Chili Sauce:
- In a blender or food processor, combine dried red chilies, garlic, shallots, fish sauce, soy sauce, oyster sauce, palm sugar, and water. Blend until you get a smooth paste.
- Cook the Chili Sauce:
- In a separate pan or wok, heat a bit of vegetable oil over medium heat.
- Add the sliced bell pepper and onion. Stir-fry for 1-2 minutes until they start to soften.
- Pour in the blended chili paste and cook for another 2-3 minutes, stirring constantly, until the sauce thickens slightly.
- Serve:
- Place the crispy fried fish on a serving platter.
- Pour the prepared chili sauce over the fish, ensuring it’s evenly coated.
- Garnish with spring onions (scallions) and cilantro.
