  • Vegetable oil, for frying

For the Chili Sauce:

  • 5-6 dried red chilies, soaked and deseeded
  • 4 cloves garlic
  • 2 shallots, chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1/4 cup water
  • 1/2 bell pepper (any color), sliced
  • 1/2 onion, sliced
  • Spring onions (scallions) and cilantro, for garnish

🍽️ Instructions:

  1. Prepare the Fried Fish:
    • Season the fish with salt and pepper, both inside and out.
    • Dredge the fish in all-purpose flour, shaking off any excess.
  2. Fry the Fish:
    • Heat vegetable oil in a deep frying pan or wok over medium-high heat.
    • Carefully place the fish in the hot oil and fry until golden brown and crispy on both sides, about 6-8 minutes per side depending on the size of the fish.
    • Remove the fried fish from the oil and drain on paper towels to remove excess oil.
  3. Make the Chili Sauce:
    • In a blender or food processor, combine dried red chilies, garlic, shallots, fish sauce, soy sauce, oyster sauce, palm sugar, and water. Blend until you get a smooth paste.
  4. Cook the Chili Sauce:
    • In a separate pan or wok, heat a bit of vegetable oil over medium heat.
    • Add the sliced bell pepper and onion. Stir-fry for 1-2 minutes until they start to soften.
    • Pour in the blended chili paste and cook for another 2-3 minutes, stirring constantly, until the sauce thickens slightly.
  5. Serve:
    • Place the crispy fried fish on a serving platter.
    • Pour the prepared chili sauce over the fish, ensuring it’s evenly coated.
    • Garnish with spring onions (scallions) and cilantro.
