Hey everyone!
I just made this cozy, comforting dish, and it was such a hit that I had to share! It’s easy, filling, and perfect for a quick dinner. Here’s the recipe:

Ingredients:

  • 1 cup polenta (or quick-cooking polenta to save time)
  • 4 cups water or vegetable broth (for extra flavor)
  • 1/2 cup grated Parmesan cheese 🧀
  • 2 tablespoons butter or olive oil
  • 2 cups fresh spinach 🍃
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cloves garlic, minced 🧄
  • 1/2 teaspoon red pepper flakes (optional, for a kick)
  • Salt and pepper to taste
  • Optional: a drizzle of olive oil or balsamic glaze for serving

Steps:

  1. Cook the polenta according to package instructions using water or broth. Stir in Parmesan cheese and butter at the end for creaminess.
  2. In a large skillet, heat a little oil and sauté garlic until fragrant. Add the spinach and cook until wilted.
  3. Toss in the white beans, red pepper flakes, salt, and pepper. Heat through.
  4. Serve the creamy polenta in bowls, topped with the spinach and white bean mixture. Add a drizzle of olive oil or balsamic glaze for extra flavor.
Let me know if you try it or if you have any fun variations! 😊
