Ingredients:
- 1 cup polenta (or quick-cooking polenta to save time)
- 4 cups water or vegetable broth (for extra flavor)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter or olive oil
- 2 cups fresh spinach
- 1 can (15 oz) white beans, drained and rinsed
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for a kick)
- Salt and pepper to taste
- Optional: a drizzle of olive oil or balsamic glaze for serving
Steps:
- Cook the polenta according to package instructions using water or broth. Stir in Parmesan cheese and butter at the end for creaminess.
- In a large skillet, heat a little oil and sauté garlic until fragrant. Add the spinach and cook until wilted.
- Toss in the white beans, red pepper flakes, salt, and pepper. Heat through.
