Poppy Seed Cake with Mascarpone Recipe:

Ingredients:For the cake:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup poppy seeds
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
For the mascarpone frosting:

  • 8 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, until well combined. Stir in the buttermilk, vanilla extract, and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
For the mascarpone frosting:

  1. In a mixing bowl, beat the softened mascarpone cheese and powdered sugar until smooth and creamy.
  2. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. Once the cake has cooled completely, spread the mascarpone frosting over the top of the cake.
