- 1/4 cup vinegar
- 2 tablespoons brown sugar
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/4 cup cooking oil
- In a bowl, combine minced garlic, soy sauce, vinegar, brown sugar, ground black pepper, and salt. Mix until well combined.
- Place the pork belly slices in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the pork belly, making sure all pieces are well coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight for best flavor.
- Heat cooking oil in a pan over medium-high heat.
- Remove the pork belly slices from the marinade, shaking off excess marinade.
- Fry the pork belly slices in batches until golden brown and crispy on both sides, about 3-5 minutes per side.
- Once cooked, remove from the pan and drain on paper towels to remove excess oil.
