  • 1 kg pork belly (liempo), sliced into 1-inch thick pieces

  • 5 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 cup cooking oil
Instructions:
  1. In a bowl, combine minced garlic, soy sauce, vinegar, brown sugar, ground black pepper, and salt. Mix until well combined.
  2. Place the pork belly slices in a large resealable plastic bag or a shallow dish.
  3. Pour the marinade over the pork belly, making sure all pieces are well coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight for best flavor.
  4. Heat cooking oil in a pan over medium-high heat.
  5. Remove the pork belly slices from the marinade, shaking off excess marinade.
  6. Fry the pork belly slices in batches until golden brown and crispy on both sides, about 3-5 minutes per side.
  7. Once cooked, remove from the pan and drain on paper towels to remove excess oil.
  8. Serve hot with steamed rice and your favorite dipping sauce.
