- 4 pork loin chops, boneless, about 1/2 inch thick
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (plain or seasoned)
- Vegetable oil, for frying
- Lemon wedges, for serving
- Parsley, chopped, for garnish (optional)
- Place each pork chop between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the pork chops until they are about 1/4 inch thick. Season both sides of the pork chops with salt and pepper.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each pork chop in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the pork chop evenly with breadcrumbs, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium-high heat. Add enough oil to cover the bottom of the skillet by about 1/4 inch.
- Once the oil is hot, carefully place the breaded pork chops in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 145°F (63°C).
- Transfer the cooked schnitzels to a paper towel-lined plate to drain any excess oil.
- Serve the pork schnitzels hot, garnished with lemon wedges and chopped parsley if desired. They pair well with mashed potatoes, salad, or your favorite side dish. Enjoy!
