Perfect for chilly evenings, this hearty soup is loaded with tender potatoes, flavorful leeks, and aromatic herbs.
Ingredients:
- 2 tablespoons butter
- 2 leeks, white and light green parts sliced
- 3 cloves garlic, minced
- 4 large potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup heavy cream
- Chopped chives or green onions for garnish
Instructions:
1. In a large pot, melt butter over medium heat. Add sliced leeks and minced garlic, sauté until softened.
2. Add diced potatoes to the pot, stirring occasionally for a few minutes.
3. Pour in vegetable or chicken broth and add dried thyme. Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until potatoes are tender.
