Hey everyone! 🥔 Just made this super comforting potato casserole, and it’s the perfect side dish for any meal. Creamy, cheesy, and oh so good!

Ingredients:
  • 6 medium potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup butter, melted
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (for topping)
Instructions:
  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13
baking dish.
  1. Mix Ingredients: In a large bowl, combine the sour cream, cream of chicken soup, melted butter, chopped onion, shredded cheddar cheese, salt, and pepper. Stir in the sliced potatoes until evenly coated.
  2. Assemble the Casserole: Spread the potato mixture evenly into the greased baking dish. Sprinkle the crushed cornflakes on top for extra crunch.
  3. Bake: Cover with foil and bake for 40 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the top is golden.
  4. Serve: Let it cool slightly, then serve hot!
