Ingredients:
- 6 medium potatoes, peeled and thinly sliced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup butter, melted
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 cup crushed cornflakes (for topping)
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13
- Mix Ingredients: In a large bowl, combine the sour cream, cream of chicken soup, melted butter, chopped onion, shredded cheddar cheese, salt, and pepper. Stir in the sliced potatoes until evenly coated.
- Assemble the Casserole: Spread the potato mixture evenly into the greased baking dish. Sprinkle the crushed cornflakes on top for extra crunch.
- Bake: Cover with foil and bake for 40 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the top is golden.
- Serve: Let it cool slightly, then serve hot!
