I've recently tried making Potbelly's oatmeal chocolate chip cookies at home, and they turned out amazing! The chewy texture combined with the melty chocolate chips and hearty oats is simply irresistible. Here’s how you can make them too:
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 cups old-fashioned rolled oats
- 1 1/2 cups semisweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream the butter and sugars together in a large bowl until smooth and creamy. This should take about 2-3 minutes.
- Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next. Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the oats and chocolate chips until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden but the centers are still soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
