I recently made these Pulled Jackfruit Tacos, and they were an absolute hit! 🌮 The jackfruit really mimics the texture of pulled pork, and the spices give it so much flavor. It's a fun and tasty way to enjoy tacos with a plant-based twist.

Ingredients:
  • 1 can of young green jackfruit in brine
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/4 cup barbecue sauce
  • Corn or flour tortillas
  • Your favorite taco toppings (like avocado, cilantro, lime, etc.)
Instructions:
  1. Drain and rinse the jackfruit, then shred it with a fork or your hands to create that pulled texture.
  2. In a pan, sauté the diced onion until soft, then add the garlic and cook for another minute.
  3. Stir in the shredded jackfruit, smoked paprika, cumin, chili powder, and oregano. Cook for about 5 minutes to let the flavors blend.
  4. Add the barbecue sauce and a splash of water. Simmer on low heat for 10-15 minutes, stirring occasionally, until the jackfruit is tender and well-coated in the sauce.
  5. Warm up your tortillas, fill them with the pulled jackfruit, and top with your favorite taco fixings.
