Hello everyone! If ever you find yourself looking for turmenic-seasoned rice noodles topped with a variety of ingredients like shrimp, pork, chicken, herbs, peanuts, and crispy rice crackers, you can try this traditional Vietnamese dish. This one is called Quang-Style Noodles and I'm sharing here a recipe to serve 5 people.

Quang-Style Noodles (Mì Quảng) Recipe
Ingredients:
For the Broth:
- 1.5 liters (6 cups) chicken or pork broth
- 1 onion, peeled and halved
- 2 inches ginger, sliced
- 2-3 cloves garlic, smashed
- 1 teaspoon whole black peppercorns
- 2 tablespoons fish sauce
- Salt, to taste
For the Noodles and Toppings:
- 500g rice noodles (banh pho)
- 250g shrimp, peeled and deveined
- 250g pork belly, thinly sliced
- 250g chicken breast, thinly sliced
- 2 tablespoons vegetable oil
- 1 tablespoon minced shallots
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 tablespoon sugar
- Salt and pepper, to taste
- 1 cup roasted peanuts, crushed
- 1 cup mixed herbs (cilantro, mint, Thai basil), chopped
- 1 cup bean sprouts
- 5 pieces rice crackers (banh da), broken into smaller pieces
- Lime wedges, for serving
- Chili slices, for serving (optional)
Instructions:
- Prepare the Broth:
- In a large pot, combine the chicken or pork broth, onion halves, ginger slices, smashed garlic cloves, and black peppercorns.
- Bring the broth to a boil, then reduce the heat to low and simmer for about 30-40 minutes to infuse the flavors. Season with fish sauce and salt to taste. Strain the broth and set aside.
- Prepare the Noodles and Toppings:
- Cook the rice noodles according to the package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a skillet, heat the vegetable oil over medium heat. Add the minced shallots and garlic, and sauté until fragrant.
- Add the sliced pork belly, chicken breast, and shrimp to the skillet. Stir-fry until the meats are cooked through.
- Season the meat mixture with ground turmeric, sugar, salt, and pepper. Cook for another minute, then remove from heat.
- Assemble the Quang-Style Noodles:
- Divide the cooked rice noodles among serving bowls.
- Arrange the cooked meat mixture, crushed peanuts, chopped herbs, bean sprouts, and broken rice crackers on top of the noodles.
- Ladle the hot broth over the noodles and toppings, enough to cover them.
- Serve immediately with lime wedges and chili slices on the side for extra flavor and heat.
- Enjoy:
- Mix all the ingredients together before eating to evenly distribute the flavors.
- Squeeze lime juice over the noodles and add chili slices according to your preference.
