    • 1/2 cup raspberry jam (store-bought or homemade)
  • For the Decoration:
    • Powdered sugar, for dusting
Instructions:

  1. Prep the Dough:
    • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
    • In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
    • Add the egg yolks and vanilla extract, mixing until combined.
    • Gradually add the flour, ground pistachios, and salt, mixing until just combined.
  2. Shape and Cut:
    • Divide the dough in half and roll out each half on a lightly floured surface to about 1/8 inch thick.
    • Use a round cookie cutter to cut out cookies. For half of the cookies, use a smaller round cutter or a cookie cutter with a design to cut out the center.
  3. Bake:
    • Place the cookies on the prepared baking sheets and bake for 8-10 minutes, or until the edges are lightly golden.
    • Let the cookies cool completely on a wire rack.
  4. Assemble:
    • Spread a thin layer of raspberry jam on the flat side of each whole cookie.
    • Top with the cookies that have the cut-out center.
    • Dust with powdered sugar for a pretty finish.
