Red Pepper and Feta Omelette Recipe

Ingredients:
  • 2 large eggs
  • 1/4 cup diced red pepper
  • 2 tablespoons crumbled feta cheese
  • Salt and pepper to taste
  • 1 teaspoon olive oil
  • Chopped fresh parsley or green onions for garnish (optional)
Instructions:
  1. Crack the eggs into a bowl and beat them until well mixed.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Add the diced red pepper to the skillet and sauté for 2-3 minutes until slightly softened.
  4. Pour the beaten eggs over the red pepper in the skillet.
  5. Let the eggs cook for a minute or two until the edges start to set.
  6. Using a spatula, gently lift the edges of the omelette and tilt the skillet to let the uncooked egg flow underneath.
  7. Once the eggs are mostly set but still slightly runny on top, sprinkle the crumbled feta cheese over one half of the omelette.
  8. Carefully fold the other half of the omelette over the cheese to form a half-moon shape.
  9. Cook for another minute until the cheese is melted and the omelette is cooked through.
  10. Slide the omelette onto a plate, sprinkle with chopped parsley or green onions if desired, and serve hot.
