For the Crust:​

  • 2 cups of chocolate cookie crumbs (such as Oreos)
  • 1/4 cup of unsalted butter, melted

    For the Cheesecake Filling:
  • 3 packages (24 ounces) of cream cheese, softened
  • 1 cup of granulated sugar
  • 1/4 cup of sour cream
  • 3 large eggs
  • 2 teaspoons of vanilla extract
  • 2 tablespoons of cocoa powder
  • 1 tablespoon of red food coloring

For the Cream Cheese Topping:​

  • 1 cup of powdered sugar
  • 1/2 cup of unsalted butter, softened
  • 1 teaspoon of vanilla extract
  • 8 ounces of cream cheese, softened

    Instructions

1. Preheat the Oven:​

  • Preheat your oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with aluminum foil to prevent any leakage.

2. Make the Crust:​

  1. In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the springform pan. Set aside.

3. Prepare the Cheesecake Filling:​

  1. In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth.
  2. Add the sour cream, eggs, vanilla extract, cocoa powder, and red food coloring. Beat until well combined and smooth.

4. Pour the Filling:​

  1. Pour the cheesecake filling over the prepared crust in the springform pan. Smooth the top with a spatula.

5. Bake:​

  1. Place the springform pan in a large baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the springform pan.
  2. Bake the cheesecake in the preheated oven for about 60-70 minutes, or until the edges are set but the center is slightly jiggly.
  3. Turn off the oven and leave the cheesecake inside with the door closed for another hour.
  4. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.

6. Make the Cream Cheese Topping:​

  1. In a mixing bowl, beat together the powdered sugar, softened butter, vanilla extract, and cream cheese until smooth and creamy.

7. Serve:​

  1. Once the cheesecake has chilled, remove it from the springform pan and spread the cream cheese topping over the top.
  2. Slice and serve the red velvet cheesecake chilled.
