Ingredients:​

For the filling:

  • 4 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
For the topping:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions:​

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the chopped rhubarb, granulated sugar, flour, and vanilla extract until the rhubarb is evenly coated. Pour the mixture into the prepared baking dish, spreading it out evenly.
  3. In another bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Sprinkle the topping evenly over the rhubarb mixture in the baking dish.
  5. Bake in the preheated oven for 35 to 40 minutes, or until the rhubarb is tender and the topping is golden brown and crispy.
  6. Remove from the oven and let it cool slightly before serving. Enjoy your delicious rhubarb crisp alone or with a scoop of vanilla ice cream or a dollop of whipped cream!

I love that it uses vanilla extract in the filling - that adds a nice touch. I might also try adding a pinch of ground ginger for a bit of a spicy kick. 😋👍😉✨
