  • 1 leg of lamb (approximately 4-5 pounds)
  • 4 cloves of garlic, minced
  • 2 tablespoons of fresh rosemary, chopped (or 2 teaspoons of dried rosemary)
  • 2 tablespoons of fresh thyme, chopped (or 2 teaspoons of dried thyme)
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 lemon, juiced
Instructions:
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, pepper, and lemon juice to form a paste.
  3. Pat the leg of lamb dry with paper towels. This helps the seasoning adhere better. Then, using a sharp knife, make small slits all over the lamb.
  4. Rub the garlic and herb paste all over the lamb, making sure to work it into the slits you made.
  5. Place the lamb on a roasting rack in a roasting pan, fat side up.
  6. Roast the lamb in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 145°F (63°C), for medium, 160°F (71°C), and for well-done, 170°F (77°C).
  7. Once the lamb is cooked to your liking, remove it from the oven and let it rest for about 15 minutes before slicing. This allows the juices to redistribute and ensures a juicier roast.
  8. Slice the lamb and serve with your favorite side dishes, such as roasted vegetables, mashed potatoes, or a fresh salad.
