I recently whipped up some roasted red pepper hummus, and it was a hit! The smoky sweetness from the peppers blends perfectly with the creamy texture of the hummus. It's great as a snack or spread.
Roasted Red Pepper Hummus Recipe
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup olive oil
- 2 roasted red peppers
- 2 cloves garlic
- Juice of 1 lemon
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions:
- In a food processor, combine the chickpeas, tahini, roasted red peppers, garlic, lemon juice, and cumin.
- Blend until smooth, gradually adding olive oil as needed to reach your desired consistency.
- Season with salt and pepper to taste.
- Transfer to a bowl, drizzle with a bit more olive oil, and serve with your favorite veggies or pita bread.
