Roasted Red Pepper Hummus

I recently whipped up some roasted red pepper hummus, and it was a hit! The smoky sweetness from the peppers blends perfectly with the creamy texture of the hummus. It's great as a snack or spread. 😋

Roasted Red Pepper Hummus Recipe​

Ingredients:​

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 2 roasted red peppers
  • 2 cloves garlic
  • Juice of 1 lemon
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions:​

  1. In a food processor, combine the chickpeas, tahini, roasted red peppers, garlic, lemon juice, and cumin.
  2. Blend until smooth, gradually adding olive oil as needed to reach your desired consistency.
  3. Season with salt and pepper to taste.
  4. Transfer to a bowl, drizzle with a bit more olive oil, and serve with your favorite veggies or pita bread. 🥖
