Ingredients:

  • 3 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined, tails on
  • Salt and pepper, to taste
  • 2 large red bell peppers, finely diced
  • 1 red onion, finely diced
  • 2 cloves garlic, thinly sliced
  • 4 teaspoons fresh oregano, finely chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup dry rosé wine
  • 1/2 cup heavy cream
  • 12 ounces dried bucatini pasta
Directions:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add them to the skillet. Cook until they turn pink and opaque throughout, about 2 minutes per side. Transfer the cooked shrimp to a plate.
  2. In the same skillet, add the remaining 1 tablespoon of olive oil. Stir in the diced bell peppers, onion, garlic, 2 teaspoons of oregano, and red pepper flakes. Cook, stirring occasionally, until the vegetables are tender and slightly browned, about 5 minutes.
  3. Pour in the rosé wine and heavy cream, scraping any browned bits from the bottom of the skillet with a wooden spoon. Bring the mixture to a simmer and let it cook until the alcohol evaporates and the sauce reduces by half, about 3 minutes.
  4. Transfer the sauce to a blender and puree until smooth. Season with salt and pepper to taste, then pour it back into the skillet and keep it warm over medium-low heat.
  5. In a separate large pot, bring salted water to a boil. Cook the bucatini pasta until just al dente according to the package instructions, then drain it well.
  6. Add the cooked pasta and shrimp to the sauce in the skillet, along with 1 teaspoon of oregano. Toss everything together until well coated and heated through.
  7. Transfer the pasta to a large shallow serving bowl and sprinkle the remaining 1 teaspoon of oregano on top before serving. Enjoy your rose red pepper shrimp pasta!
