Ingredients:

  • 500g squid tubes, cleaned and sliced into rings
  • 3-4 tablespoons sambal paste (adjust to taste)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions:

  1. Prepare the Squid:
    • Clean the squid tubes thoroughly, removing any membranes or cartilage.
    • Slice the squid tubes into rings and set aside.
  2. Cook the Sambal Sauce:
    • Heat the vegetable oil in a large skillet or wok over medium heat.
    • Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
    • Add the sliced onion, red bell pepper, and green bell pepper to the skillet. Cook for 2-3 minutes until the vegetables are slightly softened.
    • Stir in the sambal paste and cook for another 2-3 minutes, stirring continuously.
  3. Add the Squid:
    • Add the sliced squid rings to the skillet, stirring to coat them evenly with the sambal sauce.
    • Cook the squid for about 3-4 minutes until it turns opaque and is cooked through. Be careful not to overcook the squid, as it can become tough.
  4. Season the Dish:
    • Stir in the soy sauce, fish sauce, brown sugar, and lime juice. Mix well to combine.
    • Taste the dish and adjust the seasoning with salt, pepper, or more lime juice if needed.
  5. Serve:
    • Transfer the Sambal Squid to a serving platter.
    • Garnish with chopped cilantro.
    • Serve hot as a main dish with steamed rice or noodles on the side.
Enjoy your homemade Sambal Squid with friends and family!

Feel free to adjust the spiciness of the dish by adding more or less sambal paste according to your taste preferences. You can also add other ingredients like sliced chilies or shallots for extra flavor and texture.
