Ingredients:
- 2 medium sayote (chayote), peeled and sliced into thin strips or cubes
- 2 tablespoons vegetable oil (or any cooking oil of your choice)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 medium tomato, chopped
- 1 bell pepper (any color), sliced
- 1 medium carrot, peeled and sliced thinly
- 1/4 cup soy sauce
- Salt and pepper to taste
- Optional: 1/4 cup chicken or vegetable broth
- Optional: A pinch of sugar to balance the flavors
Instructions:
- Prepare the Sayote:
- Peel the sayote and remove the seed. Slice it into thin strips or cubes, depending on your preference.
- Heat the Oil:
- In a large pan or wok, heat the vegetable oil over medium heat.
- Sauté the Aromatics:
- Add the minced garlic and chopped onion to the pan. Cook until the onion becomes translucent and the garlic is fragrant.
- Add the Tomato and Bell Pepper:
- Add the chopped tomato and bell pepper to the pan. Cook for about 2-3 minutes until the tomato softens and the bell pepper begins to get tender.
- Add the Sayote and Carrot:
- Add the sayote and carrot to the pan. Stir well to combine all the ingredients.
- Season the Dish:
- Pour in the soy sauce. If using, add the chicken or vegetable broth for extra flavor. Stir everything together and let it cook for about 5-7 minutes, or until the sayote and carrot are tender but still slightly crisp.
- Adjust the Flavor:
- Taste the dish and add salt, pepper, and a pinch of sugar if desired. Stir well.
- Serve:
- Transfer the sautéed sayote to a serving dish and enjoy it hot. It pairs well with rice and can be served as a side dish or a main course.
