Ingredients:​

  • 2 medium sayote (chayote), peeled and sliced into thin strips or cubes
  • 2 tablespoons vegetable oil (or any cooking oil of your choice)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 medium tomato, chopped
  • 1 bell pepper (any color), sliced
  • 1 medium carrot, peeled and sliced thinly
  • 1/4 cup soy sauce
  • Salt and pepper to taste
  • Optional: 1/4 cup chicken or vegetable broth
  • Optional: A pinch of sugar to balance the flavors

Instructions:​

  1. Prepare the Sayote:
    • Peel the sayote and remove the seed. Slice it into thin strips or cubes, depending on your preference.
  2. Heat the Oil:
    • In a large pan or wok, heat the vegetable oil over medium heat.
  3. Sauté the Aromatics:
    • Add the minced garlic and chopped onion to the pan. Cook until the onion becomes translucent and the garlic is fragrant.
  4. Add the Tomato and Bell Pepper:
    • Add the chopped tomato and bell pepper to the pan. Cook for about 2-3 minutes until the tomato softens and the bell pepper begins to get tender.
  5. Add the Sayote and Carrot:
    • Add the sayote and carrot to the pan. Stir well to combine all the ingredients.
  6. Season the Dish:
    • Pour in the soy sauce. If using, add the chicken or vegetable broth for extra flavor. Stir everything together and let it cook for about 5-7 minutes, or until the sayote and carrot are tender but still slightly crisp.
  7. Adjust the Flavor:
    • Taste the dish and add salt, pepper, and a pinch of sugar if desired. Stir well.
  8. Serve:
    • Transfer the sautéed sayote to a serving dish and enjoy it hot. It pairs well with rice and can be served as a side dish or a main course.
