Ingredients:
- 400g pork loin or belly, thinly sliced
- 250g green beans, trimmed and cut into bite-sized pieces
- 4 kaffir lime leaves, thinly sliced (optional)
- 2 tablespoons vegetable oil
- 3 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon palm sugar (or brown sugar)
- 1/2 cup coconut milk (optional for a creamier sauce)
- Fresh Thai basil leaves, for garnish
Instructions:
- Stir-Fry the Pork:
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the sliced pork and stir-fry until it starts to brown and becomes crispy.
- Add the Curry Paste:
- Push the pork to one side of the pan and add the red curry paste. Stir-fry the curry paste for about 1-2 minutes until fragrant.
- Combine with Green Beans:
- Mix the curry paste with the pork. Add green beans and kaffir lime leaves (if using) to the pan.
- Season the Dish:
- Season with fish sauce, soy sauce, and palm sugar. Stir well to combine all ingredients evenly.
- Optional: Add Coconut Milk (for Creamier Sauce):
- If using coconut milk, pour it into the pan and stir until well combined with the curry mixture.
- Finish and Serve:
- Continue to stir-fry for another 3-4 minutes or until the green beans are tender-crisp and the pork is fully cooked.
- Remove from heat and garnish with fresh Thai basil leaves.
