- 500g pork liver, sliced into 1/2 inch thick pieces
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1/4 cup beef or chicken broth (or water)
- 2 tablespoons balsamic vinegar
- Fresh parsley for garnish (optional)
- Start by patting dry the pork liver slices with paper towels to remove excess moisture. Season them generously with salt and pepper, and sprinkle with the dried thyme and rosemary. Dust the liver slices lightly with flour, shaking off any excess.
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter has melted and the skillet is hot, add the pork liver slices in a single layer, being careful not to overcrowd the pan. You may need to cook them in batches. Sear the liver slices for about 2-3 minutes on each side, or until nicely browned. Transfer the cooked liver slices to a plate and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and butter. Add the sliced onions and minced garlic to the skillet, and cook over medium heat, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.
- Once the onions are caramelized, return the cooked liver slices to the skillet, nestling them among the onions. Pour in the beef or chicken broth (or water) and balsamic vinegar, scraping up any browned bits from the bottom of the skillet with a wooden spoon.
- Allow the liver slices to simmer in the onion mixture for an additional 5-7 minutes, or until heated through and the flavors have melded together. Taste and adjust the seasoning if necessary.
- Serve the Pan-Seared Pork Liver with Caramelized Onions hot, garnished with fresh parsley if desired. This dish pairs wonderfully with mashed potatoes, steamed vegetables, or crusty bread. Enjoy!
