  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa or rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, for garnish
Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Peppers: Cut the tops off the bell peppers and remove seeds and membranes. Place them upright in a baking dish.
  3. Mix Filling: In a bowl, combine quinoa or rice, black beans, corn, diced tomatoes, half of the cheese, and all the spices. Stir until well mixed.
  4. Stuff Peppers: Spoon the filling mixture into each bell pepper, packing it tightly. Sprinkle remaining cheese on top.
  5. Bake: Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, until peppers are tender and cheese is melted.
  6. Garnish: Sprinkle with fresh cilantro or parsley before serving.
