- 1 lb (450g) mixed seafood (such as shrimp, scallops, mussels, and/or fish fillets), cleaned and deveined
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 red bell pepper, diced
- 1 can (14 oz / 400g) diced tomatoes
- 4 cups (946ml) seafood or vegetable broth
- 1/2 cup (120ml) dry white wine (optional)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
- In a large pot or Dutch oven, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened and fragrant.
- Add the diced carrot, celery, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables are slightly tender.
- Pour in the diced tomatoes (with their juices), seafood or vegetable broth, and white wine (if using). Stir in the dried thyme and oregano. Bring the soup to a simmer.
- Once the soup is simmering, add the mixed seafood to the pot. Season with salt and pepper to taste.
- Cover the pot and let the soup simmer gently for about 5-8 minutes, or until the seafood is cooked through and the mussels have opened (discard any mussels that do not open).
- Taste the soup and adjust seasoning if necessary.
- Serve the seafood soup hot, garnished with chopped fresh parsley and accompanied by lemon wedges for squeezing over the soup.
