- 2 celery stalks, diced

- 2 cups chopped seasonal vegetables (such as potatoes, green beans, corn, or peas)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
2. Add the minced garlic and cook for an additional minute until fragrant.
3. Stir in the diced tomatoes (with their juices) and vegetable broth. Bring the mixture to a simmer.
4. Add the chopped seasonal vegetables and dried thyme to the pot. Simmer uncovered for about 20-25 minutes, or until the vegetables are tender.
