- 3 large eggs
- 3/4 cup granulated sugar
- 1/2 cup fresh lemon juice (about 3-4 lemons)
- Zest of 2 lemons
- 1/4 cup unsalted butter, cut into small pieces
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla extract
- Start by making the lemon curd. In a heatproof bowl, whisk together the eggs, sugar, lemon juice, and lemon zest.
- Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water. Cook the mixture, whisking constantly, until it thickens enough to coat the back of a spoon, about 10-15 minutes.
- Once thickened, remove the bowl from the heat and whisk in the butter until melted and well combined. Strain the lemon curd through a fine mesh sieve to remove any lumps. Allow it to cool completely.
- In a large mixing bowl, beat the egg yolks with 1/4 cup of granulated sugar until thick and pale yellow.
- In a separate mixing bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar and continue beating until stiff peaks form.
- In another bowl, whip the heavy cream with vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the egg yolk mixture until well combined.
- Next, fold in the beaten egg whites until no white streaks remain.
- Pour half of the semifreddo mixture into a loaf pan lined with parchment paper.
- Spoon dollops of lemon curd on top of the semifreddo mixture in the pan. Use a knife or skewer to swirl the lemon curd into the semifreddo.
- Pour the remaining semifreddo mixture over the lemon curd layer and smooth the top with a spatula.
- Cover the pan with plastic wrap and freeze the semifreddo for at least 6 hours or overnight until firm.
- Before serving, let the semifreddo sit at room temperature for a few minutes to soften slightly. Slice and serve with extra lemon curd and fresh berries, if desired.
