Ingredients:
- 3 tablespoons vegetable oil
- 2 cups thinly sliced celery
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon white sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- ½ teaspoon cayenne pepper
- 2 (14.5 ounce) cans crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 bay leaf, crushed
- 1 tablespoon hot pepper sauce
- 2 pounds medium shrimp, peeled and deveined
- Heat vegetable oil in a Dutch oven over medium heat. Add celery, onions, and garlic. Sauté until onions are translucent and celery begins to soften.
- Stir in sugar, flour, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes until flour is lightly browned.
- Add crushed tomatoes, tomato sauce, crushed bay leaf, and hot pepper sauce. Bring to a boil, then reduce heat to low.
- Simmer uncovered for 30 minutes, stirring occasionally.
- About 15 minutes before serving, add peeled shrimp to the pot. Stir well to combine. If needed, adjust heat to maintain a gentle simmer until shrimp are pink and cooked through.
- Remove and discard bay leaf before serving.
- Serve hot over rice or with crusty bread.
