Once, while exploring a bustling farmer's market, I encountered a girl eager to cook. She excitedly shared her simple pasta toss recipe: In a pan, sauté garlic, cherry tomatoes, spinach, and olives. Add cooked pasta and toss with olive oil, salt, pepper, and Parmesan cheese.

INGREDIENTS​

  • 16ounces rotini pasta
  • 4boneless skinless chicken breast halves, cut into bite size pieces
  • 4tablespoons olive oil
  • 3garlic cloves, minced
  • 1 1⁄4teaspoons salt
  • 1 1⁄4teaspoons garlic powder
  • 1 1⁄4teaspoons dried basil
  • 1 1⁄4teaspoons dried oregano
  • 1cup sun-dried tomato, chopped
  • 1⁄4cup parmesan cheese, grated (optional)

DIRECTIONS​

  • Cook and drain pasta as directed.
  • While pasta is cooking, in a large pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked.
  • Add sun-dried tomatoes and cook for two minutes.
  • Remove from heat and toss with pasta.
  • Serve with grated Parmesan cheese if desired.
