Once, while exploring a bustling farmer's market, I encountered a girl eager to cook. She excitedly shared her simple pasta toss recipe: In a pan, sauté garlic, cherry tomatoes, spinach, and olives. Add cooked pasta and toss with olive oil, salt, pepper, and Parmesan cheese.

INGREDIENTS
- 16ounces rotini pasta
- 4boneless skinless chicken breast halves, cut into bite size pieces
- 4tablespoons olive oil
- 3garlic cloves, minced
- 1 1⁄4teaspoons salt
- 1 1⁄4teaspoons garlic powder
- 1 1⁄4teaspoons dried basil
- 1 1⁄4teaspoons dried oregano
- 1cup sun-dried tomato, chopped
- 1⁄4cup parmesan cheese, grated (optional)
DIRECTIONS
- Cook and drain pasta as directed.
- While pasta is cooking, in a large pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked.
- Add sun-dried tomatoes and cook for two minutes.
- Remove from heat and toss with pasta.
- Serve with grated Parmesan cheese if desired.
