Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 3 cups seafood stock
  • 1 cup heavy cream
  • 1 cup mixed seafood (such as shrimp, fish, and scallops), chopped into bite-sized pieces
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish
Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
  2. Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally.
  3. Pour in the seafood stock and bring the mixture to a simmer. Let it cook until the potatoes are tender, about 10-15 minutes.
  4. Stir in the heavy cream and mixed seafood. Simmer gently until the seafood is cooked through, about 5-7 minutes. Be careful not to overcook the seafood.
  5. Season the chowder with salt and pepper to taste.
  6. Serve hot, garnished with chopped fresh parsley.
