- 2 lbs (900g) beef stew meat, cubed
- 4 medium potatoes, peeled and diced
- 3 carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups (720ml) beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- Chopped fresh parsley, for garnish (optional)
- Place the beef stew meat, potatoes, carrots, onion, and garlic in the slow cooker.
- In a mixing bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper.
- Pour the broth mixture over the beef and vegetables in the slow cooker.
- Stir everything gently to combine.
- Cover the slow cooker and cook on low heat for 7-8 hours or on high heat for 3-4 hours, or until the beef is tender and the vegetables are cooked through.
- If you prefer a thicker stew, about 30 minutes before serving, you can mix 2 tablespoons of all-purpose flour with some of the hot liquid from the stew to create a slurry. Stir the slurry into the stew and continue cooking until thickened.
- Taste and adjust seasoning if needed.
- Serve the slow cooker beef stew hot, garnished with chopped fresh parsley if desired.
