Hey everyone! Wanted to share this super comforting Slow Cooker French Onion Beef recipe I made recently. It’s ridiculously tender, packed with that rich, caramelized onion flavor, and basically melts in your mouth. If you love French onion soup, you’ll LOVE this! Perfect for serving over mashed potatoes or in sandwiches.


Ingredients:
- 3 lbs chuck roast (or beef brisket)
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 1 cup French onion soup (canned or homemade)
- 2 tbsp butter
- 1 tbsp balsamic vinegar (adds depth, trust me!)
- 1 tsp dried thyme (or 1 tbsp fresh)
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- 1 tbsp cornstarch + 2 tbsp water (for thickening, optional)
- 6 slices Swiss or Provolone cheese (if making sandwiches)
- French bread or rolls (if serving as a sandwich)
How to Make It:
- Sear the beef – Heat a skillet, melt the butter, and brown the beef on both sides (about 3-4 minutes per side). Adds so much flavor!
- Caramelize the onions – In the same skillet, cook the onions for 5-7 minutes until soft and golden. Stir in garlic, balsamic vinegar, and Worcestershire sauce.
- Slow cook – Place the beef in your slow cooker, top with the onion mixture, and pour in beef broth + French onion soup. Sprinkle thyme, salt, and pepper.
- Low & slow magic – Cover and cook on LOW for 8-10 hours (or HIGH for 4-5 hours) until the beef is fall-apart tender.
- Shred & serve – Remove the beef, shred it with forks, and mix it back into the juices. If you want a thicker sauce, mix cornstarch with water and stir it in for 10 more minutes.
- Make it extra! – If doing sandwiches, pile the beef onto toasted French bread, top with cheese, and broil for a minute until melty.
