Ingredients:

  • 3-4 pounds chuck roast
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (optional for a bit of heat)
  • 1 cup beef broth
Equipment:
  • Smoker or grill
  • Meat thermometer
  • Aluminum foil
  • Basting brush

Instructions:
  1. Preheat your smoker to 225Β°F (107Β°C).
  2. Rub the chuck roast with olive oil.
  3. In a small bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  4. Generously season the chuck roast with the spice mix.
  5. Place the chuck roast in the smoker and smoke for about 3-4 hours, or until the internal temperature reaches 160Β°F (71Β°C).
  6. Remove the roast from the smoker, wrap it in aluminum foil with the beef broth, and return it to the smoker.
  7. Continue smoking for another 2-3 hours, or until the internal temperature reaches 200Β°F (93Β°C) and the meat is tender.
  8. Let the roast rest for 30 minutes before slicing.
