- 3-4 pounds chuck roast
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (optional for a bit of heat)
- 1 cup beef broth
- Smoker or grill
- Meat thermometer
- Aluminum foil
- Basting brush
Instructions:
- Preheat your smoker to 225Β°F (107Β°C).
- Rub the chuck roast with olive oil.
- In a small bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
- Generously season the chuck roast with the spice mix.
- Place the chuck roast in the smoker and smoke for about 3-4 hours, or until the internal temperature reaches 160Β°F (71Β°C).
- Remove the roast from the smoker, wrap it in aluminum foil with the beef broth, and return it to the smoker.
- Continue smoking for another 2-3 hours, or until the internal temperature reaches 200Β°F (93Β°C) and the meat is tender.
- Let the roast rest for 30 minutes before slicing.
