Ingredients​

  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 6 cloves garlic, minced
  • 1 pound ground pork
  • 1 pound ground beef
  • 2 large eggs
  • ½ cup panko breadcrumbs
  • 3 tablespoons meatloaf seasoning
  • 2 tablespoons Worcestershire sauce
  • ½ cup BBQ sauce

Instructions​

  1. Preheat the Smoker
    • Set the smoker to 225°F.
  2. Prepare the Aromatics
    • Heat olive oil in a large skillet over medium-high heat.
    • Sauté the onions for 4-5 minutes.
    • Add minced garlic and sauté for an additional minute.
    • Remove from heat and set aside.
  3. Combine Ingredients
    • In a large bowl, combine ground pork, ground beef, eggs, breadcrumbs, meatloaf seasoning, and Worcestershire sauce.
    • Add the cooked onions and garlic. Mix gently with your hands until just combined. Avoid over-mixing to prevent the meatloaf from becoming tough.
  4. Shape the Meatloaf
    • Form the mixture into a loaf shape.
    • Place the meatloaf on a grill-safe pan, wire rack, or a piece of heavy-duty foil folded in half for extra strength.
  5. Smoke the Meatloaf
    • Place the meatloaf in the preheated smoker.
    • Smoke for 30 minutes.
  6. Glaze the Meatloaf
    • After 30 minutes, brush ¼ cup of BBQ sauce over the top and sides of the meatloaf.
    • Continue smoking for an additional 1 ½ hours.
  7. Monitor the Temperature
    • Begin checking the internal temperature of the meatloaf after 2 hours of smoking.
    • Check every 15 minutes until the internal temperature reaches 160°F. Total smoking time should be between 2 ½ to 3 hours.
  8. Finish and Rest
    • Once the meatloaf reaches 160°F, remove it from the smoker.
    • Brush with the remaining ¼ cup of BBQ sauce.
    • Allow the meatloaf to rest for at least 15 minutes to prevent it from crumbling when sliced.
  9. Serve
    • Cut the meatloaf into 8 slices and serve.
