Ingredients​

  • 1 oz dried snow fungus (white fungus)
  • 6 cups water or chicken broth
  • 1/2 cup rock sugar (adjust to taste)
  • 1-2 dried red dates (optional)
  • 1/4 cup goji berries (optional)
  • 1-2 slices of ginger (optional)
  • Freshly squeezed lemon juice (optional, for serving)

Instructions​

  1. Soak the Snow Fungus: Rinse the dried snow fungus under cold water. Soak it in warm water for about 30 minutes until it becomes soft. Remove the hard stem and tear it into smaller pieces.
  2. Prepare the Soup Base: In a pot, combine the water or chicken broth with ginger, rock sugar, and red dates (if using). Bring it to a boil.
  3. Add Snow Fungus: Once the broth is boiling, add the soaked snow fungus and goji berries (if using). Reduce the heat and let it simmer for about 30-40 minutes.
  4. Adjust Flavor: Taste the soup and adjust the sweetness by adding more rock sugar if desired. If you like, add a splash of freshly squeezed lemon juice for brightness.
  5. Serve: Remove the ginger slices before serving. Ladle the soup into bowls and enjoy warm!
