Today, I'm excited to share my go-to recipe for Soondubu, a cozy Korean soft tofu stew that's perfect for chilly evenings. It's surprisingly simple yet bursting with flavors. Here's what you'll need:
Ingredients:
- 1 block (14 oz) soft tofu
- 1/2 cup kimchi, chopped
- 1/4 cup ground pork or beef (optional)
- 1/2 onion, sliced
- 2-3 shiitake mushrooms, sliced
- 1 green onion, chopped
- 1-2 cloves garlic, minced
- 1/2 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon gochugaru (Korean red pepper flakes)
- Salt and pepper to taste
- 2 cups anchovy or vegetable broth
- 1 egg (optional)
- Rice for serving
Instructions:
- Prepare the Ingredients:
- If using meat, cook it in a pot until browned. Add onions, garlic, and mushrooms. Sauté until onions are translucent.
- Add Kimchi and Seasoning:
- Stir in the chopped kimchi, gochugaru, soy sauce, and sesame oil. Sauté for another 2-3 minutes until fragrant.
- Pour in Broth:
- Add the broth to the pot and bring it to a gentle boil. Let it simmer for about 5-7 minutes to allow the flavors to meld together.
- Add Tofu and Egg (if using):
- Gently slide the tofu into the pot, breaking it up into large chunks with a spoon. If you like, crack an egg into the stew for added richness. Simmer for another 5 minutes.
- Finish and Serve:
- Taste and adjust seasoning with salt and pepper as needed. Sprinkle chopped green onions on top for freshness.
- Enjoy!:
- Serve hot with steamed rice on the side. The soft tofu and spicy-savory broth make every spoonful a comforting delight. Perfect for warming up your evenings!
