- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk, cold
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda until well combined.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Make a well in the center of the flour mixture and pour in the cold buttermilk. Using a fork or spatula, gently stir the mixture until the dough comes together. Be careful not to overmix; the dough should be shaggy and slightly sticky.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a rectangle about 1/2 to 3/4 inch thick.
- Using a floured biscuit cutter or the rim of a glass, cut out biscuits from the dough. Press straight down with the cutter without twisting to ensure the biscuits rise properly.
- Place the cut biscuits onto the prepared baking sheet, leaving a little space between each one.
- Gather any scraps of dough, gently pat them together, and cut out additional biscuits until all the dough is used.
- Bake the biscuits in the preheated oven for 10-12 minutes, or until they're golden brown on top and cooked through.
