Spice up your breakfast routine with this authentic Spanish Omelette recipe! Packed with potatoes, onions, and eggs, it's a hearty and flavorful dish that's perfect for any time of day.
Ingredients:
- 4 medium potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 6 large eggs
- Salt and pepper, to taste
- Olive oil, for frying
Instructions:
1. Heat a generous amount of olive oil in a large skillet over medium heat.
2. Add the thinly sliced potatoes and onions to the skillet and cook, stirring occasionally, until the potatoes are tender and lightly golden brown, about 10-12 minutes. Remove from the skillet and drain excess oil.
3. In a large mixing bowl, beat the eggs and season with salt and pepper.
4. Add the cooked potatoes and onions to the beaten eggs and mix until well combined.
5. Heat a bit more olive oil in the skillet over medium heat. Pour the egg and potato mixture into the skillet, spreading it out evenly.
