  • 1 1/2 cups chicken or vegetable broth
  • 1 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1/2 cup frozen peas (optional)
  • 1/4 cup chopped fresh cilantro (optional)
Instructions:

  1. Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened, about 3-4 minutes.
  2. Toast Rice: Add the rice to the skillet and cook, stirring frequently, until the rice is lightly toasted, about 2-3 minutes.
  3. Add Liquids and Spices: Stir in the chicken or vegetable broth, tomato sauce, ground cumin, chili powder, salt, and pepper. Bring the mixture to a boil.
  4. Simmer: Reduce the heat to low, cover, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Optional Additions: If using, stir in the frozen peas during the last 5 minutes of cooking. Once cooked, fluff the rice with a fork and stir in the chopped cilantro if desired.
  6. Serve: Serve hot as a side dish with your favorite main course.
