Ingredients:
- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar, for dusting
- 1 cup strawberry jam
- Fresh strawberries, for garnish
- Whipped cream, for serving (optional)
- Preheat your oven to 350°F (175°C) and line a 9x13-inch baking sheet with parchment paper.
- In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed until pale and fluffy, about 5-7 minutes.
- Sift the flour, baking powder, and salt into the egg mixture. Gently fold the dry ingredients into the eggs until just combined, being careful not to deflate the batter.
- Pour the batter onto the prepared baking sheet and spread it out evenly with a spatula.
- Bake in the preheated oven for 10-12 minutes, or until the cake is golden brown and springs back when lightly pressed.
- While the cake is still warm, sprinkle a clean kitchen towel with powdered sugar. Carefully invert the cake onto the towel and gently peel off the parchment paper.
