Hey everyone! I wanted to share a recipe that’s a big hit in my house, especially when we’re craving something with a bit of a kick. These Spicy Collard Greens With Bacon are super flavorful and pack just the right amount of heat. They’re perfect as a side dish or even on their own. Hope you all enjoy it as much as we do!

- 1 bunch of collard greens (about 10-12 large leaves)
- 4 slices of thick-cut bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1-2 tsp red pepper flakes (adjust based on your heat preference)
- 1 cup chicken broth (or veggie broth)
- 1 tbsp apple cider vinegar
- Salt and black pepper to taste
- Start by washing the collard greens thoroughly and removing the tough stems. Stack a few leaves at a time, roll them up, and slice into ribbons.
- In a large skillet or pot, cook the chopped bacon over medium heat until it’s crispy. Remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the skillet.
- Add the diced onion to the skillet and cook in the bacon fat until it’s soft and translucent. Toss in the minced garlic and cook for another minute until fragrant.
- Stir in the red pepper flakes and let them cook for about 30 seconds to bring out the flavor.
- Add the collard greens to the skillet in batches, stirring them in as they wilt down. Once all the greens are in, pour in the chicken broth and bring it to a simmer.
- Cover the skillet and let the greens cook for about 30-40 minutes, stirring occasionally, until they’re tender.
- Once the greens are cooked, stir in the apple cider vinegar and the cooked bacon. Season with salt and black pepper to taste.
- Serve them up as a side to your favorite main dish, or enjoy them on their own with some cornbread on the side!
