This Squash Casserole is a warm, comforting dish perfect for any gathering. It's creamy, cheesy, and packed with nutritious squash. Whether it's a family dinner or a potluck, this casserole is sure to be a hit!

Recipe Details​

Ingredients:

  • 4 cups sliced yellow squash
  • 1/2 cup chopped onion
  • 1 cup grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 2 eggs, beaten
  • 2 tbsp butter, melted
  • Salt and pepper to taste
Procedure:

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sliced squash and chopped onion in salted water until tender, then drain.
  3. In a large bowl, mix together the squash, onion, cheddar cheese, Parmesan cheese, sour cream, and beaten eggs.
  4. Pour the mixture into a greased casserole dish.
  5. In a small bowl, combine the crushed crackers and melted butter, then sprinkle over the top of the casserole.
  6. Bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
