Ingredients:- 4 cups sliced yellow squash
- 1/2 cup chopped onion
- 1 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup sour cream
- 1 cup crushed crackers
- 2 eggs, beaten
- 2 tbsp butter, melted
- Salt and pepper to taste
- Preheat your oven to 350°F (175°C).
- Boil the sliced squash and chopped onion in salted water until tender, then drain.
- In a large bowl, mix together the squash, onion, cheddar cheese, Parmesan cheese, sour cream, and beaten eggs.
- Pour the mixture into a greased casserole dish.
- In a small bowl, combine the crushed crackers and melted butter, then sprinkle over the top of the casserole.
- Bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
