Ingredients​

  • 2 cups cooked and pureed squash (butternut or pumpkin works well)
  • 1 cup milk (or cream for richness)
  • 3/4 cup sugar (adjust to taste)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions​

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Squash: If you haven't already, cook and puree the squash until smooth. You can steam or roast it until tender.
  3. Mix Ingredients: In a large mixing bowl, combine the pureed squash, milk, sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk until well combined and smooth.
  4. Pour into Baking Dish: Grease a baking dish or individual ramekins. Pour the custard mixture into the dish.
  5. Bake: Place the baking dish in the preheated oven and bake for about 45-50 minutes, or until the custard is set and a knife inserted in the center comes out clean.
  6. Cool and Serve: Let the custard cool for a few minutes before serving. It can be enjoyed warm or chilled.
