- 2-3 pieces green chili peppers (siling haba), chopped (adjust according to your preferred level of spiciness)
- 2 pieces red chili peppers (siling labuyo), chopped (adjust according to your preferred level of spiciness)
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 3 tablespoons calamansi juice (or lemon juice)
- 2 tablespoons soy sauce
- 2 tablespoons mayonnaise
- 1 tablespoon butter or oil
- Salt and pepper to taste
- Chopped spring onions and/or chopped fresh parsley for garnish
- Optional: 1 egg (for serving)
- In a large skillet or frying pan, melt the butter (or heat oil) over medium-high heat.
- Add the chopped onions and garlic to the pan and sauté until they become translucent and fragrant.
- Add the chopped squid pieces to the pan and cook for about 5-7 minutes or until they are cooked through. Be careful not to overcook the squid as it can become tough and rubbery.
- Once the squid is cooked, add the chopped red and green chili peppers, as well as the red and green bell peppers. Stir everything together and cook for another 2-3 minutes.
- Pour in the calamansi juice (or lemon juice) and soy sauce. Mix well to combine and let it cook for another 2-3 minutes.
- Season with salt and pepper according to your taste preferences.
- Turn off the heat and add the mayonnaise to the pan. Stir everything together until the mayonnaise is well incorporated and coats the squid mixture evenly.
- Transfer the squid sisig to a serving platter and garnish with chopped spring onions and/or fresh parsley.
- Optional: For a richer flavor and creamier texture, crack an egg over the squid sisig while it's still hot and mix it in.
- Serve the squid sisig hot with steamed rice or as a pulutan (appetizer or side dish) with your favorite alcoholic beverage.
