Ingredients:
  • 500g squid, cleaned and chopped into small pieces
  • 1 large onion, finely chopped

  • 3 cloves garlic, minced
  • 2-3 pieces green chili peppers (siling haba), chopped (adjust according to your preferred level of spiciness)
  • 2 pieces red chili peppers (siling labuyo), chopped (adjust according to your preferred level of spiciness)
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 3 tablespoons calamansi juice (or lemon juice)
  • 2 tablespoons soy sauce
  • 2 tablespoons mayonnaise
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • Chopped spring onions and/or chopped fresh parsley for garnish
  • Optional: 1 egg (for serving)
Instructions:
  1. In a large skillet or frying pan, melt the butter (or heat oil) over medium-high heat.
  2. Add the chopped onions and garlic to the pan and sauté until they become translucent and fragrant.
  3. Add the chopped squid pieces to the pan and cook for about 5-7 minutes or until they are cooked through. Be careful not to overcook the squid as it can become tough and rubbery.
  4. Once the squid is cooked, add the chopped red and green chili peppers, as well as the red and green bell peppers. Stir everything together and cook for another 2-3 minutes.
  5. Pour in the calamansi juice (or lemon juice) and soy sauce. Mix well to combine and let it cook for another 2-3 minutes.
  6. Season with salt and pepper according to your taste preferences.
  7. Turn off the heat and add the mayonnaise to the pan. Stir everything together until the mayonnaise is well incorporated and coats the squid mixture evenly.
  8. Transfer the squid sisig to a serving platter and garnish with chopped spring onions and/or fresh parsley.
  9. Optional: For a richer flavor and creamier texture, crack an egg over the squid sisig while it's still hot and mix it in.
  10. Serve the squid sisig hot with steamed rice or as a pulutan (appetizer or side dish) with your favorite alcoholic beverage.
