Steamed Chicken with Scallions and Ginger
Ingredients:
- 1 lb (450g) boneless, skinless chicken thighs or breasts
- 2-3 scallions (green onions), chopped (reserve some for garnish)
- 1-inch piece of fresh ginger, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice wine or sherry (optional)
- Salt and pepper, to taste
- Fresh cilantro (optional, for garnish)
Instructions:
- Prepare the chicken:
- If using breasts, consider cutting them into smaller pieces for more even cooking.
- Season the chicken with salt and pepper.
- Marinate:
- In a bowl, combine soy sauce, sesame oil, and rice wine. Add the sliced ginger and half of the chopped scallions.
- Add the chicken to the marinade and let it sit for at least 15-30 minutes.
- Set up for steaming:
- Fill a pot or steamer with water and bring it to a simmer.
- Place the marinated chicken in a heatproof dish that fits in your steamer. Scatter the remaining scallions and a few slices of ginger on top of the chicken.
- Steam the chicken:
- Place the dish in the steamer and cover. Steam for about 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
- Serve:
- Carefully remove the dish from the steamer. Garnish with fresh cilantro and additional scallions if desired.
- Serve with steamed rice or noodles, and enjoy!
