Steamed Chicken with Scallions and Ginger​

Ingredients:​

  • 1 lb (450g) boneless, skinless chicken thighs or breasts
  • 2-3 scallions (green onions), chopped (reserve some for garnish)
  • 1-inch piece of fresh ginger, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine or sherry (optional)
  • Salt and pepper, to taste
  • Fresh cilantro (optional, for garnish)

Instructions:​

  1. Prepare the chicken:
    • If using breasts, consider cutting them into smaller pieces for more even cooking.
    • Season the chicken with salt and pepper.
  2. Marinate:
    • In a bowl, combine soy sauce, sesame oil, and rice wine. Add the sliced ginger and half of the chopped scallions.
    • Add the chicken to the marinade and let it sit for at least 15-30 minutes.
  3. Set up for steaming:
    • Fill a pot or steamer with water and bring it to a simmer.
    • Place the marinated chicken in a heatproof dish that fits in your steamer. Scatter the remaining scallions and a few slices of ginger on top of the chicken.
  4. Steam the chicken:
    • Place the dish in the steamer and cover. Steam for about 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
  5. Serve:
    • Carefully remove the dish from the steamer. Garnish with fresh cilantro and additional scallions if desired.
    • Serve with steamed rice or noodles, and enjoy!
