  • 2 cups rice flour
  • 1 cup sugar
  • 2 tablespoons baking powder
  • 1 1/2 cups water
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Grated coconut for serving (optional)

Instructions:​

  1. Prepare Steamer:
    • Fill the bottom of a steamer with water and bring it to a boil. Grease the molds of your puto molds with a little oil or butter to prevent sticking.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, combine the rice flour, sugar, and baking powder. Stir until well mixed.
  3. Add Wet Ingredients:
    • Gradually add the water and coconut milk to the dry ingredients, stirring continuously to avoid lumps. Add the vanilla extract and mix until smooth. If desired, you can add a few drops of food coloring to the batter to give it a colorful appearance.
  4. Fill the Molds:
    • Pour the batter into the greased puto molds, filling them about three-fourths full.
  5. Steam the Rice Cakes:
    • Place the filled molds in the steamer basket, making sure not to overcrowd them. Steam the rice cakes for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve:
    • Once cooked, remove the steamed rice cakes from the steamer and allow them to cool slightly before removing them from the molds.
    • Serve the steamed rice cakes warm or at room temperature, topped with grated coconut if desired.
