Steamed rice cakes, also known as "puto" in Filipino cuisine, are soft, fluffy, and slightly sweet cakes made from rice flour. Here's a simple recipe to make steamed rice cakes at home


Ingredients:
- 2 cups rice flour
- 1 cup sugar
- 2 tablespoons baking powder
- 1 1/2 cups water
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- Food coloring (optional)
- Grated coconut for serving (optional)
Instructions:
- Prepare Steamer:
- Fill the bottom of a steamer with water and bring it to a boil. Grease the molds of your puto molds with a little oil or butter to prevent sticking.
- Mix Dry Ingredients:
- In a large mixing bowl, combine the rice flour, sugar, and baking powder. Stir until well mixed.
- Add Wet Ingredients:
- Gradually add the water and coconut milk to the dry ingredients, stirring continuously to avoid lumps. Add the vanilla extract and mix until smooth. If desired, you can add a few drops of food coloring to the batter to give it a colorful appearance.
- Fill the Molds:
- Pour the batter into the greased puto molds, filling them about three-fourths full.
- Steam the Rice Cakes:
- Place the filled molds in the steamer basket, making sure not to overcrowd them. Steam the rice cakes for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Once cooked, remove the steamed rice cakes from the steamer and allow them to cool slightly before removing them from the molds.
- Serve the steamed rice cakes warm or at room temperature, topped with grated coconut if desired.
